Pretty much after you have upgraded to DD-WRT any version is safe. Meaning it probably won't brick your router. If they don't work as expected you can always revert back to an older firmware.
I have the "dd-wrt.v24-13309_NEWD-2_K2.6_big.bin" version installed on my 3500L. Am I supposed to watch the router database page for newer versions? Or can I install the latest build from the broadcom chip? Is that safe?

Click on the downloads tab above and then go to the WNR3500 > DD-WRT list. This will show you the latest firmwares for the WNR3500 which uses the broadcom chip.
