On the Netgear forum, a moderator said that flashing any 3rd party FW on the R7000 would void its warranty. Is that true? If so, is it possible to flash back to the stock Netgear FW over the DD-WRT?

Yes, it is technically true that modifying your router, e.g. installing 3rd party firmware, can void the warranty. We always say "flash at your own risk."
However, you can easily install the NETGEAR firmware from DD-WRT. It may require changing the extension of the official NETGEAR firmware, but generally works without issue.
